Lemon Drizzle Cake



This is the best lemon drizzle cake i have ever come across and I very much hope you will like it!

Ingredients:
(cake)
100g softened butter
175g self-raising flour
1 tsp baking powder
175g golden caster sugar
2 large eggs
6 tbsp milk
grated rind of 1 large lemon
(topping)
juice of 1 large lemon (you need 3 tablespoons)
100g golden caster sugar

How to:
1. Preheat the oven to 180 centigrade.
2. Grease a tin about 18cm to 28cm.
3. Put all the cake ingredients into a large mixing bowl and beat for 2-3 minutes, until the mixture drops easily off the spoon.
4. Spoon the mixture into the tin and smooth the surface with the back of a spoon.
5. The baking of this cake is different to each of us. I like the cake very moist, soft and crumbly, where you bake it for 15-20 minutes. If you like it slightly harder, bake for 30-40 minutes.
6. To make the icing, mix together the juice and golden caster sugar.
7. Pour the mixture evenly onto the cake whilst it is still hot.
8. leave to cool, then cut into squares.

Restaurant Fifteen Chocolate Brownies



These brownies are from the famous restaurant called Fifteen in London. It is absoulutey great and they are one of the best brownies you will ever taste! Get some really good quality chocolate when making them for maximum effect. The trick with these also is to slightly underbake them, to get the moist effect. Enjoy!!

Ingredients:
250g unsalted butter
200g dark chocolate (70% cocoa solids)
80g cocoa powder
65g plain powder
1 teaspoon baking powder
350g caster sugar
4 large eggs
(Optional)
150g chopped nuts
50g broken up milk chocolate stirred in, so it cooks in chunks in the brownie

Method:
1. Preheat oven to 180 centigrade.
2. Grease a 30cm rectangular baking tin.
3. Melt butter and dark chocolate in a large bowl over boiling water. Mix until smooth. If you are lazy, you can just stick it in the microwave.
4. Add nuts or/and broken up milk chocolate if you are using them. Stir in.
5. In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar. Add this to the chocolate and butter mixture and stir together well.
6. Beat the eggs and mix in until mixture is of a silky consistency.
7. Pour mix into baking tray.
8. Place in oven for about 25 minutes. Remember not to overcook them and if you stick a fork in it, you don't want it to come out clean.
9. The brownies should be slightly springy on the outside, but gooey in the middle. Let them cool in the tray, then cut into squares.
